Awesome Orange Muffins

Bake fresh, healthy muffins in minutes. This recipe is awesome and always makes delicious muffins. It uses 1 whole orange which is blended with sugar, oil, milk and combined with dry ingredients. Muffins bake in a short 12 to 15 minutes. So if you have an orange in your kitchen, blitz it up and make tea time a delicious experience with minimal effort!
Ingredients:
1 medium orange
1 cup of sugar
1 large egg
1/2 cup milk
1/2 cup rice bran oil or any other flourless cooking oil
2 cups self-raising flour
1/2 tsp baking soda
1/2 tsp salt
Customize it!
Optional Additions:-
1/2 cup dried fruit such as dates (chopped), sultanas or raisins
1/2 cup chopped nuts such as walnuts or pecans
1/2 cup chocolate chips
Instructions:
1. Preheat oven to 210 degrees Celsius or 200 degrees Celsius fan-forced.
2. Line a muffin tray with cupcake liners or you can spray some cooking oil to grease the tray. This makes 12 large or 24 mini muffins.
3. Chop the whole orange (with skin and all) into eight pieces or smaller chunks and add to a food processor.
4. Add sugar and process till orange is very finely chopped.
5. To this add egg, milk, and oil and blend briefly until its well combined.
6. Measure flour, baking soda, and salt in a large mixing bowl and mix well with a fork. You can add any optional ingredients at this stage and mix well.
7. Pour the liquid mixture from the blender onto the flour mixture.
8. Fold the mixture together until flour is dampened. Take care to not over mix at this stage. The mixture should not be smooth.
9. Spoon equal amounts of the mixture into the muffin tray.inserted
10. Bake for 12 to 15 minutes, until the muffin is golden and a skewer inserted in the centre of the largest muffin comes out clean.
11. Place the muffin tray on a cooling rack for 2 to 3 minutes and then remove the muffins. Store cooled muffins in airtight containers in a cool place.
