Fiji Fried Fish
This is a wonderful way to serve fried fish as an entree or an Indian curry dinner. This also goes well with humble dhal and rice. Fish is wonderfully spicy and delicious. This is my mother-in-law's recipe and we always love it when she makes it!
Adjust the spice and chilli to suit your taste. It works best when the fish is cut into smaller pieces and deep-fried on medium heat for some time to give it the crisp, crunchy coasting.
Ingredients:
1 kg fish, cut in small pieces (I like to use 'Leather Jacket' fish)
1 lemon, juiced
1 cup of plain flour
Oil for deep frying
Marinade:
2 tsp garam masala
1 tsp ground turmeric
5 cloves of garlic, crushed
2 hot green chillies, crushed
1 cm piece of ginger, crushed
1/2 tsp tamarind concentrate, mixed in with 2 tbsp water
Salt to taste
Method:
1. Cut fish into small pieces (1 cm to 1.5 cm square pieces)
2. Squeeze the juice of 1 lemon over the fish and leave it aside for 10 minutes.
3. Rinse the fish and coat with the marinade.
4. Heat oil in a pan for deep frying.
5. Individually, dip the fish pieces in plain flour, dust off excess, and fry on medium heat
until golden.
5. Taste the first piece of fried fish and adjust salt or chilli as required.
6. Fry in small batches. Enjoy with dhal and rice or as an entree with drinks.
