Kheer (Rice Pudding) - nade easy

Kheer or Indian rice pudding is a loverly luxurious dessert. It is made out of rice, milk, sugar, spices, and nuts. Generally, it is prepared for Hindu festivals, prayers, and celebrations. It is a favourite with children and babies. Kheer is lovely, served by itself, or when eaten with puris.
This is a simple recipe, that will work every time and make a wonderfully delicious kheer. When preparing this recipe, take note of the following:-
Rice - it is best to use long grain rice or one that cooks up fluffy and thick and gets a bit mushy when overcooked. To speed up the process, you can also soak the rice for a couple of hours or overnight prior to cooking.
Heat - Ensure that the rice does not catch on the bottom of the pan and the milk does not burn as this will ruin the taste. Stir frequently and cook a low heat, especially after the addition of milk.
Spices - Depending on your preference, you can omit the spices or adjust the amount to your taste.
Ingredients:
1 can condensed milk (approximatley 400ml)
1 cup long-grain rice
1 litre water
1/2 cup raisins/ sultanans
1/2 cup slivered almonds
2 tsp cardamom powder
1 tsp nutmeg powder
Procedure:
In a heavy-based saucepan, wash the rice, add water and bring to boil. Turn heat to low and simmer until the rice grains appear to be overcooked and mushy. Stir frequently during cooking to stop the rice from catching and burning on the bottom.
You may need to add more water; ensure you have approximately 1cm of water covering the rice during cooking.
Once the rice is soft and appears overcooked, add condensed milk, almonds, and sultanas. Continue to cook on low heat, until kheer has a thick consistency.
Turn the heat off and add the spices.
Serve hot and Enjoy!
