Easy Vegetarian Nachos

Getting tired of the same old for lunch? Are kids driving you crazy, rummaging through the pantry and looking for something to eat? Is boredom setting in?

This is a quick and easy vegetarian Nacho recipe to give you a quick pick up! Get the kids involved and have fun with this one. Great for a quick lunch or a snack.












Ingredients:

1 packet Corn Chips - Doritos (170g)

1 jar salsa dip (300g)

1 can baked beans (200g)

1/2 brown onion

1 tbsp cooking oil

1 cup tasty cheese shredded

1/2 medium red capsicum diced

1/2 cup chopped coriander leaves

Fresh chillies to taste - chopped

Salt to taste

4 tbsp hummus dip to serve


Tips:

Add vegetables of your choice such as shredded iceberg lettuce leaves, sliced radish or diced avocado.

You can replace hummus with sour cream











Instructions:

1. Preheat oven to 180 degrees Celsius.

2. Divide the Doritos into 4 to make individual nacho serves.

3. Line a large baking tray with greaseproof /baking paper and arrange around a base layer of Doritos.

4. In a frying pan, heat the oil and cook onions until translucent.

5. Add salsa, baked beans, and chillies. Cook on medium heat for 2 to 3 minutes.

6. Season with salt

7. Place a generous amount of this mixture over the prepared Dorito base layer.

8. Add chopped capsicum and coriander.

9. Top with shredded cheese and bake at 180 degrees Celcius for 10 minutes, or until the cheese has melted and it is golden in color.

10. You can top this with fresh shredded lettuce, finely sliced radish and diced avocado or any vegetable of you choice.

11. Serve with humus - optional.


This is a nice change from the usual routine. The addition of fresh vegetables is a great way to top up on the daily vegetable intake and kids love it!
