Eggless Banana Bread

This is my go-to recipe for eggless banana bread, and also happens to be vegan! The ingredients are easy staples that you will find in your pantry at most times so there is no reason to throw those overripe bananas out anymore. The recipe can be prepared quickly and easily baking for 30 - 40 minutes to create a wholesome, delicious treat. A warm slice of banana bread with a cup of tea is always heartwarming and satisfying.


When life gives you overripe bananas, make banana bread!

This recipe uses whole wheat flour which is a healthier option. You can substitute the spices to suit your preference. I went with nutmeg and cardamon, but you can replace this with cinnamon or mixed spice of equal quantities. You can further customize it with delicious additions like chopped dates, nuts like walnut or seeds such as sunflower.

Eggless Banana Bread:-

Prep Time: 15mins Cooking Time: 30 - 40mins Serves: 12 slices


Ingredients:

3 medium overripe bananas

1/2 cup brown sugar

1/2 cup coconut oil

1/4 tsp cardamon - optional

1/8 tsp nutmeg - optional

1 tsp vanilla extract

2 tbsp maple syrup

1/4 cup chopped dates - optional

11/2 cups whole wheat flour

1/2 tsp baking soda

11/2 tsp baking powder

a pinch of salt



Instructions to bake banana bread

1. Preheat oven to 180 degrees Celsius or 160 degrees Celsius (fan-forced).

2. Grease and line a loaf pan with baking paper.

3. In a large mixing bowl, add the banana and chop it into small pieces.

4. Add sugar to the bananas and mash. Make sure that no large lumps of banana remain. You can use a fork or a potato masher. Alternatively, you can also use a blender for this step.



5. Add the spices - cardamom and nutmeg to the mixture. These are the optional spices. Feel free to replace these spices with 1/4 tsp of cinnamon if you prefer. Add vanilla extract and mix the wet mixture until well combined.


6. In a separate bowl, sift together the whole wheat flour, baking soda, and baking powder, as well as the salt.

7. Add the dry ingredients to the wet mixture and very gently fold the mixture until the flour is wet and the mixture is combined. Ensure the mixture is not overmixed.



8. Add the dates, optional nuts, seeds, dried fruit or chocolate chips of your choice. Fold together gently to combine.



9. Transfer the mixture to the prepared loaf pan.

10. Bake for 30 - 40 minutes until a skewer inserted in the centre comes out clean.

11. Once the bread has cooled remove from the pan and slice. Store the remaining banana bread in cling wrap in an airtight container. Serve warm with a spread of butter. Enjoy!


Optional Tips:

1. If you prefer, reduce the amount of sugar to 1/3 cup.

2. Maple syrup and dates give it a sweeter taste and can be omitted for a less sweet taste.

3. Instead of dates, you can add chocolate chips, sunflower seeds, walnuts and feel free to try out other optional additions.

4. Substitute oil with rice bran, olive oil or any other mildly flavored cooking oil.
